What is Coya?
Coya is a restaurant in Four Seasons Resort Jumeirah, Dubai. Rectangle Interiors took it from concept design through construction, including the bar and the bespoke millwork. The work was carried out inside an operating property, in the access windows it allowed.

Coya sits inside the Four Seasons Resort Jumeirah, and that setting sets the terms. A restaurant operating within a resort answers to the hotel's standards as well as to its own identity, and the build has to happen around a property that never closes.
We took the interior from design through construction, with the joinery made in our own workshop. Working to the resort's access windows was as much a part of the job as the design itself.
Kitchen extraction inside a resort has to use routes the property already has, and food-safety approval runs alongside the resort's own engineering sign-off rather than instead of it. Both have to be cleared before the room can open.
Food-safety approval and the resort's engineering sign-off were cleared in parallel rather than in sequence, which is what kept the opening date intact.
